Garlic Grown in Limestone Soil and Big Temperature Swings

Danyang is a mountain county on the bends of the Namhan River, best known for limestone landscapes such as the Dodamsambong rock peaks and Gosu Cave. That limestone also shapes its farming. Danyang garlic grows in limestone country with large differences between day and night temperatures, and it is described as firm, long-keeping and strongly pungent in both taste and aroma. The garlic grown in Danyang is a cold-climate type. Korean garlic is broadly divided into cold-climate garlic, grown in the chilly inland regions, and warm-climate garlic, grown along the mild southern coast. Cold-climate garlic is planted in autumn, spends the winter in the ground and is harvested in early summer the following year. It tends to have fewer, firmer cloves and a sharper bite, so many people seek it out for kimchi-making and seasoning.

The Danyang Garlic Festival at Summer Harvest

The freshest time to meet Danyang garlic is summer, right after the harvest. Danyang County has held a cold-climate garlic festival around this time every year, and in 2026 the 20th edition took place from July 17 to 19 at Danyang Ecological Sports Park. At the festival you can buy garlic straight from the farmers and taste garlic dishes. Garlic is traditionally sold by the jeop, a unit of 100 bulbs, and a jeop of Danyang garlic is said to weigh about 3 to 4 kilograms. Many households buy their garlic for winter kimchi-making at this time. Even outside the festival, you can buy Danyang garlic and garlic products at the market in Danyang-eup and at farm produce shops, which makes it a handy souvenir.

Danyang Gugyeong Market and Its Garlic Snacks

The easiest place to taste Danyang garlic is Danyang Gugyeong Market, the permanent market in Danyang-eup. It has been selected as one of the Korea Tourism Organization's ten K-Tourism Markets. The market is full of garlic-based snacks, from garlic bread and garlic sundae soup to garlic tteokgalbi (grilled patties), garlic dumplings and black garlic ice cream. The standout is dakgangjeong, sweet-and-crispy fried chicken, made with black garlic, a market specialty that several shops compete over with their own recipes. The garlic intensity differs from shop to shop, so tasting a few is half the fun. In August 2025 the Korea Tourism Organization held a food event here called Dracula Garlic Night, playing on Dracula's famous dislike of garlic, and the garlic dishes served in its tasting course were described as available at the market every day.

What Makes Black Garlic Different

The black garlic you see all over the market is ordinary garlic aged for a long time at a controlled temperature and humidity until it turns black. Aging tames raw garlic's sharp heat and strong smell, leaving it soft with a sweet, slightly tangy flavor. That makes it easy to snack on even for people who find raw garlic too much, and it also turns up in dakgangjeong glazes and desserts such as ice cream. Along with raw garlic, Danyang sells plenty of garlic products, including black garlic, garlic juice and pickled garlic. The raw garlic is the pungent cold-climate type and great for cooking, while black garlic can be eaten straight away and is a popular gift. If you are worried about the smell, choose vacuum-packed products so it does not take over your car or hotel room.

Making It Part of a Danyang Trip

Danyang Gugyeong Market sits in the center of Danyang-eup, so it is easy to combine with major sights such as Dodamsambong, Mancheonha Skywalk and the cliffside walkway along the Danyang River. Many travelers pick up takeout dakgangjeong or garlic bread at the market and eat it at an observation deck or on a riverside path. Have a meal of garlic sundae soup or garlic tteokgalbi at one of the market restaurants, buy some garlic and black garlic on the way out, and you have covered the flavors of Danyang in one go. The summer harvest season is ideal for buying new garlic along with the festival, and in autumn the market fills with people shopping for kimchi-making garlic. Popular dakgangjeong shops get long lines on weekends and during holidays, so order takeout in advance or go off-peak. Garlic dishes are strong, so if you have more plans afterward, it is wise to carry some gum or a drink to freshen up.
